Either/Or - Barrel-Aged Spiced Dark Saison
A blend of two barrel aged beers and fresh beer. A dark saison, a weizenbock and fresh Belgian style amber, this funk forward ale offers the best of two worlds. Lots of oak and vanilla upfront, an interesting nutty flavour through the middle followed by a tart, funky finish. Definitely a flavour forward beer.
- A blend of two barrel aged beers - Hot Love Under a Cold Moon (50%) & Thoughts on Good & Evil (35%) and fresh Path to Mellow (15%)
- Vanilla & anise seed were added to help round out the flavour profile.

Sam's Take on Either/Or:
After a barrel tasting we felt that these two brands blended really well together. Hot Love Under a Cold Moon and Thoughts on Good and Evil had both been in barrels for around 2 years and had developed some similar taste profiles. And although we liked the blend, we felt it needed a bit more body. So we added some fresh Path to Mellow and vanilla to round out the body. Lastly, we felt that there was already a slight anise flavour to the blend, so we thought adding an anise seed tea would help accentuate that particular character.
The name was…difficult. We had a few ideas that didn’t quite fit. But then I was reading an article about hangovers (obviously) that lead me to reading about Kierkegaard (even more obvious)...his first published work was called Either/Or. I thought the name fit with a blended beer and I was quite intrigued about the “how should we live?” question the book posed. Plus, I was really running out of time.
